Domino Sugar Chef Exclusives with Eleonora Lahud

Bakers rejoice. Sasha Rionda chats with Domino® Sugar’s Corporate Chef Eleonora Lahud to get two exclusive recipes using their light and dark brown sugars – Zucchini Bread and Golden Raisin Pecan Oatmeal Cookies.

Zucchini Bread

A classic quick bread with simple steps for preparation. Brown sugar provides hints of caramel flavor.
Prep Time: 10 minutes
Cook Time: 60-70 minutes

Ingredients
• 3/4 cup Domino® Light Brown Sugar
• 1/2 cup Domino® Granulated Sugar
• 2 large Eggs
• 2/3 cups Vegetable oil
• 1 teaspoon Pure vanilla extract
• 1/2 teaspoon Ginger, freshly grated
• 2 cups (about 2 medium) Zucchini, freshly grated
• 2 cups All-purpose flour
• 1 1/2 teaspoons Ground cinnamon
• 1 teaspoon Baking powder
• 1 teaspoon Salt
• 1/2 teaspoon Baking soda
• 1/2 teaspoon Nutmeg, freshly grated
• 1 cup Walnuts, roughly chopped

Instructions
Step 1
Preheat oven to 350°F. Grease and flour 1(1-pound) loaf pan.
Step 2
In a large bowl mix both sugars, vegetable oil, eggs, vanilla, and ginger. When all ingredients are well combined, add the grated zucchini. Set aside.
Step 3
In a medium bowl, whisk together all the dry ingredients. Using a spatula, gently add the flour mixture to the zucchini mixture and mix until incorporated and no dry flour remains. Add walnuts and mix.
Step 4
Pour mixture onto prepared pan and bake for 60-70 minutes or until a toothpick inserted in the center of the bread comes out clean. Allow the bread to cool in the pan for 5 minutes and then carefully remove from pan; let the loaf of bread cool completely on a cooling rack.

Golden Raisin Pecan Oatmeal Cookie

Soft oatmeal cookies made with golden raisins and pecans. (Makes 16 servings)
Prep Time: 15 minutes
Cook Time: 10 minutes

Ingredients
• 1 cup Unsalted butter (softened)
• 2 cups Domino® Dark Brown Sugar
• 2 large Eggs
• 2 teaspoons Pure vanilla extract
• 1 ½ cups All-purpose flour
• 1 teaspoon Baking powder
• 1 teaspoon Ground cinnamon
• 1 teaspoon Salt
• 2 cups Old-fashioned oatmeal
• 1 cup Golden raisins
• 1 cup Toasted pecans

Instructions
Step 1
Preheat oven to 350 degrees F. Line 2 half sheet pans with parchment paper.
Step 2
In the bowl of an electric mixer, beat butter and brown sugar until light and fluffy. Add eggs, one at a time, and vanilla. Beat until creamy.
Step 3
Stir together flour, baking powder, cinnamon, and salt in a small bowl; gradually add to the butter mixture, beating until well mixed. Stir in the oatmeal, pecans, and raisins.
Step 4
Using an ice-cream scoop, drop dough onto lined sheet pans. Bake for 10 minutes or until lightly browned. Remove from the oven and let the cookies rest for 5 minutes in the pan. Transfer the cookies to a baking rack. Cool completely.
