Baked Feta PDO Gratin with Roasted Red Peppers
Makes about 2 dozen toasts

1 (16-ounce) jar roasted red peppers, rinsed, and cut into strips
8 ounces Feta PDO cheese, sliced into planks 1/2-inch thick
2 teaspoons fresh rosemary leaves, finely chopped
2 teaspoons chopped fresh oregano
2 cups best-quality store-bought marinara sauce
20 pitted kalamata olives
Freshly ground black pepper
1 baguette, sliced
Olive oil or nonstick cooking spray, for brushing

Heat the oven to 425°F. Scatter the roasted red pepper strips on the bottom of a gratin dish. Nestle Feta PDO into the peppers and sprinkle over half of the herbs. Spoon over the tomato sauce to coat evenly. Top with the olives and the remaining herbs. Season with black pepper.

Place the slices of baguette all around the edge of the casserole. Spritz the bread with olive oil spray.

Transfer the gratin to the oven. Bake until the mixture bubbling and hot and the bread is golden brown, about 20 minutes. Serve immediately.
